OPENING WINES- HOW TO USE A CORKSCREW

Opening wines is easy! Get a sturdy corkscrew like this cute pink one from truebrands.com. I like the double hinged waiter’s corkscrew because they have a foil cutter and they're very simple to use.

First, cut the foil or paper at the neck if your bottle has one, next wind the corkscrew into the cork and use leverage to pull the cork out completely. You can save your cork for recorking later.

If you aren’t confident using a corkscrew, don’t worry! It can take some practice and even professionals don’t get it perfectly right every time.

POURING WINE LIKE A PROFESSIONAL

If you want to pour wine like a professional, it can take some practice. Tilt the bottle to pour, aiming at the center of the bottom of the wine glass. Pull the bottle back up quickly from your wrist, turning the bottle slightly as you do.

If you want to pour like a true professional, pour so that the wine will not stain the label if you have any droplets spill. It can be tricky, but it’s fun to practice pouring. You can even practice with an empty wine bottle and some water for a fun party trick!

OPENING UP THE FLAVOR OF YOUR RED WINE

Some red wines can tighten up once bottled. I like to allow red wines a chance to breathe and aerate. You can uncork your red wine an hour or two before serving or you can pour your wine and allow it a few minutes to open up in the glass. If you sip your wine slowly, it should open up like a bouquet and become more delicious and intricate as you continue to taste.

STORING WHITE WINES

White wines can typically last from 3-5 days once opened or they will start to lose their flavor and acidity. I like to finish a white wine bottle the same day, if possible to ensure fresh flavor and drinkability. Store your unfinished white wines in the refrigerator. You can save your cork and place it upside down back in the bottle.

Red Hill Merlot

Crisp, fresh, and silky, this Merlot is an ideal choice for easy consumption.

We love a good wine party with friends at Coal Creek Winery & Vineyard. And of course we love a good block of cheese! Throwing a wine & cheese party is the perfect way to create a memorable event for your friends that they’ll talk about for years to come. 

Here are 5 fun tips on how to pair wine with cheese for an unforgettable wine & cheese party.   

Blackberry Wine | Sweet Wines Made in Oklahoma

Intense Wine, Intense Cheese

Choose to pair intense wines with intense cheese and delicate wines with a cheese with a more subtle flavor. This factoid is the key to a successful wine and cheese pairing. 

Our bolder wines will be our blackberry wine, raspberry wine. Our wild sunset mead and orange blossom mead are also both bolder choices and are best paired with a more adventurous cheese. A cheese with a strong, nutty flavor profile makes an interesting choice for one of these wines. 

Our medium intensity wines will be our Second Bridge Chardonnay, our Rabbit Road Riesling, and our Rock Bottom Rosé. Our Red Hill Merlot and Route 66 White Wine will also be medium intensity.  

 

When purchasing cheese, ask the deli counter person if you can try bites of a few different cheeses and choose one of high intensity, one of medium intensity, and one that’s a bit more subtle. 

Sweet Wines Made in Oklahoma

The Alcohol Content Rule 

As a general rule of thumb, you can check the alcohol content on the back of the wine and it will serve as a guide to how intense the wine will be.

If the alcohol content is over 14.5% ABV, it will typically have a bolder flavor profile and for those you’ll want to choose a bolder, more intensely flavored cheese. Wines under 12% ABV should be paired with milder cheeses.

Pair Dessert Wines with Funky Cheese

Select a funky stinky cheese to pair with your sweet wine. You can serve our super-sweet Zohera’s Dream Moscato with a cheese that is stinky, funky, or zesty for best results. The sweetness in the wine helps balance the funky aroma and flavor of your cheese and the sweet wine helps the cheese taste creamier. Our Blackberry sweet wine and Raspberry sweet wine would also pair nicely with a block of cheese that has some “funk.” 

 

Choose a Firm, Nutty Cheese If You Are Unsure How To Pair A Wine

A safe bet is choosing a firm, nutty cheese which pairs well with either a bold and flavorful wine, or a more delicately flavored wine. Cheese options here include Swiss, Gruyere, and Gouda. Your deli counter person or fromager (cheese specialist) may be able to help suggest other cheeses.

Think Local

When pairing your wine, you can also select a cheese from the same region as the wine. For example you can pair a Sauvignon Blanc from France with a Goat Cheese or you can pair one of our sweet Oklahoma Wines with cheese curds from Watonga, Oklahoma!

Enjoying a no-frills glass of wine is one of life's simple pleasures. We love to kick back and enjoy a glass of sweet wine or a chillable red or white wine and there's no better place to do that than right here in Oklahoma! Wine is better with friends and hosting a party with sweet wines is a fun way to get the party started so everyone can relax and enjoy themselves. 

But you know what else is fun? Having a few conversation starters at the party! That's why we've compiled this list of quick wine tips and tricks from prefessionals in the industry so you can teach a few wine tasting party tricks to your dinner party or barbeque guests. 

TASTING WINE

There is no wrong way to drink wine but there is, technically, a correct way to taste wine. 

First look at the wine. Notice the color of the wine. Next, smell the wine. Notice any aromas that you notice on the front end. 

Now, sip a good bit of wine (I like to say a good chunk of wine). Hold the wine in your mouth, swish it around your whole mouth. Let the wine touch every part of your mouth including your cheeks and tongue. After you swallow, you can breathe through the back of your nose a few times to see if you notice any additional aromas. 

 

Think about the wine and feel free to discuss it with your guests. There are no wrong answers when it comes to discussing wine. It’s common for tasters to experience different flavors or aromas from the same wine. Wine will also change flavor as it’s uncorked and exposed to air, so a bottle may change or grow as you drink it. 

TOASTING WINE

Learn to toast wine like a pro! This is a fun party trick that will impress your guests. 

Proper wine etiquette insists that guests look each other directly in the eye as they toast their wine glasses. Remember to hold your wine glass from the stem.

 
Clink the fattest part of the wine glass’ bowls together while maintaining eye contact. Remember to clink gently as some hosts will break out their fragile crystal. When you sip your wine, try to keep sipping out of the same spot so your lipstick or lip markings won’t appear all over your glass. 

 

Now you look polished and you can teach your guests something new and useful! 

PAIRING WINE

Knowing how to pair your wine with your dish is another way to be a great host. Try pairing whites with colorful salads and white meats. We love pairing red wines with tomato sauce and pasta. A dessert wine, like our Zohera's Dream Moscato also makes the perfect wine to enjoy after dinner. 

TALKING ABOUT WINE

You can use a handy wine wheel flavor and aroma guide like this one from Wine Folly. 

Use one or two words to describe the bouquet (or aroma).

You can also talk about the texture or mouth-feel of the wine, and describe how the wine feels on your tongue (light-bodied, medium-bodied, oily, viscous, smooth, velvety). After you taste the wine, you can mention flavors that you receive on the front-end of the sip. 

Then, you can talk about flavors that you receive after sipping and swallowing your wine sample. 

You can also mention any changes that you detect as the flavor deepens on your pallet (tongue), If you’re getting an aftertaste, you can describe that. It’s also appropriate to note if you notice any flaws in the wine.

If you are planning on hosting a dinner party you may be considering pairing your meal with a fantastic bottle of wine. We like white wine on summer nights in Oklahoma, although we like a glass of sweet red wine just as well!

Pairing your meal doesn’t have to be a painful task. You can have fun and create a unique and flavorful experience for your dinner guests that will have them inspired to try to pair a meal themselves! Then maybe they’ll return the invitation. Hint, hint!

Here are a few tricks to pairing your wine with your meal for an unforgettable dining experience with your friends and family.

Choose Your Wine

To get started, choose your wine. At our winery in Oklahoma, we create some lovely sweet wines. It’s what we’re known for! For this article, we are going to focus on a couple of our favorite chillable sweet white wines.
Our Route 66 White Wine blend is currently my favorite. This mouthwatering blend is crisp, sweet, and fruity, with a refreshing finish. 

Our Rabbit Road Riesling is also hard to top. It has a sweet start with a little tartness to the finish. This is great for those guests with a little more of an adventurous palate. 

Another great selection for your dinner party would be our Second Bridge Chardonnay. This white wine tastes great served chilled and gives hints of green apple, citrus lemon, and melon.

You can also try our Rock Bottom Rosé which also tastes fantastic chilled. Our rosé provides hints of sweet berries.

Choose Your Protein

Now that you’ve selected your wine, it’s time to pick your protein. For white wines like these, we suggest pairing your wine with a lean white meat like peppered pork, garlic chicken, or even fish or rabbit. 

Choose Your Vegetables

Choose dark green leafy vegetables like a colorful salad, brussels sprouts, or roasted carrots. 

Choosing Side Dishes

Choose a side to compliment your dish like jasmine rice, roasted potatoes, black eyed peas, or fried okra. 

Rounding Out The Meal: Dessert

If you’re serving a dessert course, keep it light for the summer. Tiramisu, banana pudding, or a fruit pie would compliment our wines. You could even choose to offer a literal dessert wine for an after meal refreshment. May we suggest our Zohera’s Dream Moscato
